Take 800 gms of butter which is at room temperature in a bowl.
Whisk the butter with an egg beater
Add 1/4 cup powdered sugar to it.
Mix everything together until light and fluffy
Add 1/4 cup condensed milk to it.
Add lemon zest, 1/4 tbsp of baking powder and baking soda to the mixture
Add 1 cup flour to the mixture
Add 1 tbsp of fresh lemon juice, 1/4 tbsp of vanilla extract and mix everything together
We have added some food color here. You can avoid it is not necessary.
Mix everything together.
Cover the mixture with plastic and refrigerate for 1 hour.
After 1 hour take the mixture out. Make small roundels with mixture.
Cover the roundels with powdered and and normal sugar.
Repeat the process for all the balls.
Heat a pan for 10 min at low temperature.
Place the roundels inside the pan and cook it for 12-15 min. You can also bake the cookies at 170 degree celcius for 10-12 min.
Your Lemon cookies are ready. Serve them as an evening snack with tea or coffee. Enjoy!!!
