
Eggless Plum Cake | No Oven Plum Cake

Ingredients
- 1/4 cup orange juice
- 0.25 tbsp almonds and pistachios - 1
- 1 tbsp Raisins
- 2 tbsp cranberries
- 3.4 cup Sugar
- 3/4 cup Water
- 1 cup Brown Bread
- 1/4 tsp Fennel Seeds
- 1 pinch Baking powder
- 1/4 tsp baking soda
- 1 tbsp walnuts
- 1/4 tsp Nutmeg
- 1/4 tsp Cinnamon - 1 small piece
- 1/4 cup Olive Oil
- 1 tbsp Cashews - 18 to 20
- 1/4 tsp salt
- 1/4 cup milk powder
Instructions

For this recipe we will need 1/4 cup of orange juice. You can either use fresh orange juice or use the one from a can. Add 1 tbsp of chopped almonds to it.

Now add 1 tbsp of cashew nuts to it

Add 1 tbsp of raisins to the mixture

You can add other berries and nuts available to you. We have added some orange and plain tutti frutti to the mixture. Keep the mixture in refrigerator for 1-2 hrs for cooling

Time to prepare the sugar cyrup. Take a pan.

Add 3/4 cup of sugar to it and switch on the flame. Keep the flame high so that the sugar melts fast

Keep stirring the sugar continuously or else it will burn

Within 2-3 minutes, the sugar will start melting. Add this point turn the gas flame to medium

After the sugar melts completely switch off the flame

Add 3/4 cup water to the sugar syrup.

Be careful while adding water to the sugar syrup as the sugar syrup is hot and mixture might splutter wile adding water. Add water in small portions

After adding water to the sugar syrup we will switch on the flame again on medium flame

Cook the mixture till everything is mixed together well

Keep the mixture aside and let it cool down completely. It will take about an hour for the syrup for cool down.

We can use a pressure cooker for baking our cake. We have use a vessel for it.

Place a stand in between the vessel.

Cover the vessel with a lid and preheat it on low flame for 15 minutes.

Till the time the vessel is getting preheated, we will prepare the batter and get our baking tin ready. We have used a 6 inch cake tin for this purpose

Greece the cake tin well with butter or oil

Place butter paper inside the cake tin so that we can remove the cake easilty after it is baked completely. Greece the butter paper with oil as well

Now we will prepare the batter for our plum cake. Take 1/4 cup milk in a bowl

Add 1/4 cup oil to it. Do not use any special type of oil like peanut oil or olive oil

Mix everything together well

Add the caramel syrup that we prepared earlier to the mixture and give it a good mix

Mix everything together to form a fine runny paste

Add 1 cup flour to the mixture using a strainer. We are using a strainer so that there are no lumps formed

Mix the mixture well using a spatula.

Now add the orange juice syrup with nuts to the mixture

Add 1/4 tsp of salt to it

Add 1/4 tsp of cardamon powder and 1/4 tsp of cinnamon powder to the mixture. Add a pinch of nutmeg powder to the mixture as well. This is completely optional

Mix everything together. As you can see consistency of the mixture is perfect. If you think the batter is thick, you can a bit of milk to it.

Now add 1 tsp baking powder to the mixture using a strainer

Add 1/4 tsp of baking soda to the mixture

Mix everything together well.

Add the batter to the cake tin immediately

Start baking the plum cake on low flame

We will open the cake while it has been half baked and garnish with nuts and berries of our choice.

Once again cover the cake with the lid and now we will only open it after the cake has been baked completely

After 40 minutes, the cake is ready

We can check if the cake has been baked properly by poking a tooth pick inside and if the tooth pick comes out clean, the cake has been baked perfectly

The cake will not stick to the sides but just to make sure, use a knife to remove the cake from the tin.

Remove the cake in a plate and remove the butter paper.
