Ingredients
- 1 tsp Sugar
- 1/2 cup peanuts
- 1/2 tsp Lemon juice - 1
- 2 Onions
- 1/4 tsp Asafoetida
- 2 cups raw potatoes
- 12 curry leaves
- 1/2 tsp Mustard Seeds
- 1 tsp Raw potatoes
- 2 tbsp Olive Oil
- 1/2 tsp Cumin seeds
- 1 tsp coriander powder
- 3 Green Chilies
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
Instructions

For this recipe, we will need 2 cups of Flat Rice. There are different qualities available in the market, both thin and thick. For this recipe, we will need the thick quality.

Soak the Flat Rice in cold water.

Wash it with soft hands. Do not over wash the Poha or else it will break. Make sure you dont keep the flat rice in the water for a long time or else, they will break

After you drain the water, you will notice that flat rice has become a bit sticky. Don't worry, the it will be separated automatically in a few minutes.

Add 3/4 tsp salt to the Flat rice.

Add 1/2 lemon to the mixture and mix everything together. Mix everything together with a spatula lightly. Keep the Mixture aside.

Take 1 tsp oil in a medium hot pan.

Add 1/2 cup peanuts to it and start frying it. You can change the quantity of peanuts as per your liking.

After few minutes you will see that the color of the peanuts has changed.

Keep the peanuts aside. We will use it later.

Take 2 tsp oil in a pan.

Add 1/2 tsp cumin seeds and 1/2 tsp mustard seeds to the mixture and cook everything till the mixture starts spluttering.

Add 1/4 tsp asafoetida to the mixture

Add 10-12 curry leaves to the mixture.

Add 2 medium sized finely chopped onions to the mixture.

Add finely chopped green chillies to the mixture. You can vary the quantity of onion according to your liking.

Mix everything together and cook everything everything together for a few minutes.

Add 1 boiled potato (cut in cubes) to the mixture.

Mix everything together and cook everything for a few minutes till the time the onions are cooked well and they turn golden brown.

Add 3/4 tsp of salt and 1/2 tsp of turmeric powder to the mixture.

Cook everything together for a few minutes.

Add the Flat Rice to the mixture.

Add 1/4 tsp of black pepper to the mixture.

Mix everything together. Add 1 tsp sugar to the mixture. If you think the sugar will make the Poha sweet, dont worry, it will enhance the taste of the Poha.

Mix everything together. Switch off the flame. Add chopped coriander leaves to the mixture to the mixture.

Add the fried peanuts to the mixture.
