
Pav Bhaji

Pav Bhaji is a classic Mumbai street food made with a spicy mashed vegetable curry (bhaji) served with butter-toasted pav buns. It’s comforting, flavorful, and perfect for a quick dinner or party snack.
Ingredients
- 3 medium potatoes
- 1 cauliflower
- 1/2 cup Green peas
- 1/2 cup red carrots
- 3 tbsp butter (or ghee)
- 1 large Onions
- 1 tbsp ginger-garlic paste
- 2 green chillies
- 3 medium Tomato
- 2 tbsp pav bhaji masala
- 1 tsp Red Chili Powder
- 1/4 tsp turmeric powder
- 1 tbsp lemon juice
- 2 tbsp Coriander Leaves (chopped)
Instructions

Boil potatoes, cauliflower, green peas, and carrots until soft. Keep aside.

Heat butter in a pan.

Add finely chopped onions and sauté until translucent.

Add ginger-garlic paste and chopped green chillies. Sauté briefly.

Add chopped tomatoes and cook until soft and mushy.

Add pav bhaji masala, red chilli powder, turmeric, and salt. Mix well.

Add boiled vegetables and mash well into a thick bhaji.

Add water as needed to adjust consistency.

Simmer for a few minutes, stirring continuously.

Finish with butter and lemon juice.

Garnish with chopped coriander leaves.

Slit pav buns horizontally and keep ready.

Toast pav with butter and pav bhaji masala until golden.
