
Mushroom Paneer Pulao | Paneer Pulao | Vegetarian Pulao

Ingredients
- 1 cup Rice flour
- 1 cup ghee/oil
- 3 cups Paneer - 1 piece
- 50 gms mushrooms
- 0.25 cup Bay leaves
- 2 Fennel Seeds
- 1 Green Onion -100 grams
- 1 tsp Garam masala
- 1 Spinach
- 1 tsp fenugreek leaves
- 3 cups Water
- 1 tbsp rose essence
- 0.25 cup Cumin powder
- 1 Onions
- 0.5 cup Fennel seeds
- 2 Tomato
- 0.5 cup Cashews - 18 to 20
- 1 tsp salt
- 1 tsp salt
- 0.5 tsp coriander powder
- 1 tsp Ginger
- 0.5 tsp cumin powder
- 0.5 tsp salt
Instructions

Clean rice with running water and soak for 30-45 mins.Take a thick based handi and add 1 Tbspn of ghee in it.Allow the ghee to heat up and then add paneer cubes. Fry both the side until golden brown and then empty into a bowl.

Add mushrooms into same handi and fry at high flame for 30 seconds. Make sure the water doesn’t release from mushroom.

In the same handi add 2 Tbspn of ghee and allow to heat.

Then add Bay leaf , cinnamon, clove , black cardamom , green cardamom , black cumin , fennel , cashews and raisins. Fry until aroma releases.

Add grated ginger and fry for 1 min. Then add onions and fry till golden brown.

Now add fried mushroom and paneer and mix well.Add curd, mix well and cook until water evaporates.

Then add salt as per taste , garam masala , red chilli powder, turmeric powder , Kasturi methi and fry for 1 min.

Add rinsed rice and fry for 1 min. Then add 2.25 cups of water and mix well.

Cook at low flame with lid on until water evaporates.

Turn off the flame and add coriander leaves and cover for another 2 mins.

Raita-Take 100 GMs of curd add chopped green chillies, onions, tomatoes , cumin powder, salt as per taste and black pepper powder. Mix it well.
