
Crispy Golden Jalebi Recipe

Jalebi is a classic Indian sweet made by piping a fermented flour batter into hot oil in spiral shapes, frying until crisp, and soaking in warm sugar syrup. It is crunchy on the outside, juicy inside, and best served fresh.
Ingredients
- 1 cup Maida
- 2 tbsp Cornflour
- 1/2 cup curd
- 1/4 tsp Baking powder
- 1 cup Sugar
- 8 strands saffron kg
- 1/4 tsp Cardamom Powder
- 1/2 tsp lemon juice
Instructions

In a bowl mix maida, cornflour, curd, baking powder, and water to make a smooth flowing batter. Cover and rest for 8 hours for fermentation.

Make sugar syrup by boiling sugar and water until slightly sticky (one-string consistency). Add saffron and cardamom, then keep it warm.

Transfer the fermented batter into a piping bag or squeeze bottle and heat oil or ghee in a wide pan on medium heat.

Pipe the batter into hot oil in spiral jalebi shapes and fry until crisp and golden on both sides.

Immediately soak the hot jalebis in warm sugar syrup for 30 to 40 seconds.

Remove jalebis from syrup and place on a plate, letting excess syrup drip off.

Your Jalebi is ready. Enjoy hot and crispy!
