
Dal Puri Recipe

Ingredients
- 150 gms ghee
- 1 tsp Ginger garlic paste
- 300 gms wheat flour
- 1 tbsp ghee/oil
- 2 tbsp Cumin powder
- 1.5 tsp Red Chili Powder
- 1 tsp Cumin seeds
- 1 tsp coriander powder
- 1 tsp coriander powder
- 0.5 tsp cumin powder
- 50 ml Olive Oil
- 2 tbsp salt
- 0.5 tsp salt
Instructions

Soak 150 gms of chana dal (chickpeas lentils) in water for a 2-3 hours.

Take 1 tsp turmeric powder, 1.5 tsp of red chilly powder in a bowl. You may adjust the quantity according to your taste.

Add 1 tsp coriander powder, 1/2 tsp cumin powder, 1/2 tsp black pepper powder to the mixture.

Add 1 tsp ginger garlic paste to the mixture

Add 2 tbsp water the mixture and mix everything well.

Add 2 tbsp oil in a cooking pan and start heating it.

After the oil is heated add 1 tsp cumin seeds to it.

Cook the cumin seeds till they splutter for maximum flavor.

Add the mixture that we created to the pan. Make sure to keep the flame low or else the spices might burn.

Mix everything together and cook for a couple of minutes. You will notice that the color of the mixture has changed and the oil is separated.

Removed the water from the lentils and add it to the mixture.

Mix everything together well.

Add 1.5 tbsp salt to the mixture.

Add 2 cups of water the mixture and give it a quick mix.

Cover it with a lid. We will cook the mixture till the lentils are cooked and the water is completely evaporated. We can do this in a pressure cooker as well but the issue either the lentils might burn or there is a lot of water left at the end.

Keep checking from time to time if the lentils have cooked. This should take 15-20 minutes.

The water will keep evaporating as the lentils are being cooked.

After 15-20 minutes, you can check if the lentils are cooked properly or not.

Cook the mixture with an open lid till all the water evaporates. Keep the mixture aside and let it cool down. We will prepare the dough for the puri now.

Time to prepare the dough for the puri. Take 300 gms of wheat flour in a bowl. Add 1/2 tsp salt the flour.

Add 1 tbsp clarified butter (ghee) to it.

Start adding water slowly to the mixture and prepare a solid but not very hard dough.

Cover the dough with a lid and keep it aside for a few minutes.

Your mixture has now cooled down.

Add the mixture to a blender.

Blend the mixture but make sure to not make a fine paste. We want the mixture to be a bit coarse.

Add the coarse mixture to a bowl. It is almost ready.

Add 2 tbsp coriander leaves to it and give it a quick mix.

Its now time to fill the puris with lentil mixture.

Take a small portion from the dough and make roundels with it.

Try to do this with hand for perfection. You might also use a rolling pin for this.

Create a flat dough not very large but big enough to place the lentil mixture inside.

Add the lentil mixture to the dough. Do not add a lot of it or else the puri might open up while while it is being deep fried.

Close the dough.

Now use a rolling pin for flattening the dough further.

Your dal puri is ready to be fried.

Let the dough be a bit thick.

Repeat the process for all the puris.

Take oil in a frying pan. Let it get hot. You need to take as much oil so as to soak the puri in the oil while it is being fried.

Add the puri in the oil after it gets hot

Your puri will bloat up as shown in the image.

Cook the puris till the time they are light golden brown. Then remove it from the oil.
