Tomato and Red Lentil Soup

Ingredients

  • 2 cloves garlic - 4 cl
  • 1 tsp cooking oil
  • 1 Onions
  • 1/2 tsp paprika
  • 1/2 tsp chilli flakes
  • 1/4 cup red lentils
  • 2 cups Water
  • 3 tsp Fresh Coconut
  • 5 basil
  • 6 Tomato
  • 1 tsp coriander powder

Instructions

    Heat oil in a pot, add onion and saute

    Add garlic, coriander powder, paprika and chilli flakes

  3. 3

    In the same pot, add lentils, tomatoes, basil and water. Bring to a boil and simmer, covered for 15 mins, until the lentils are soft

    Add coconut milk

  5. 5

    Take off heat and cool

  6. 6

    Blend and put back in the pot. Adjust taste and consistency with more coconut milk or water

  7. 7

    Serve with fresh herbs and toasted seeds
