Ingredients
- 4 clove garlic - 4 cl
- 1 Onions
- 1 Lemon Juice
- 1 cup onion paste
- 1 cup Fresh Coconut
- 2 tsp brown sugar
- 2 lemon grass
- 3 kaffir lime leaves
- 2 tsp soya sauce
- 10 Dry red chillies
- 1 tbsp Ginger
- 1 tsp coriander powder
- 2 Dry red chillies
- 0.5 tsp salt

Soak the dried chillies in hot water for 20 min then drain.

Pound or blend together all the ingredients till you get a smooth paste

Heat some sesame oil and stir-fry the paste for 2 mins

Add the vegetables/chicken and stir fry for 5 mins.

Add the coconut milk, splash of water, salt, light soy, brown sugar and kaffir lime leaves. Cook for 5-7 mins on low heat.

Adjust to taste.

Finish with thai basil, fresh lime juice and serve with rice.
