Heat oil in a pan, add finely chopped ginger, garlic and roughly chopped onion. Once it turns golden brown, add the other vegetables of your choice.
Add roughly chopped bell peppers, zucchini, capsicum, carrot, sweet corn, baby corn and blanched broccoli.
Once the vegetables are cooked, add some teriyaki sauce, tomato ketchup, red chilli sauce and soya sauce.
Add salt as per taste. Add the tofu and mix well.
