Paneer zucchini fritters or panner bhajji is small twist to the traditional bhajji that we make. This recipe is a must try for everyone.
Ingredients
- 2 zucchini
- 2 cups Paneer - 1 piece
- 0.5 cup bread
- 1 tsp chilli flakes
- 0.5 tsp oregano
- 1 tsp Lemon Juice
- 100 ml Olive Oil
- 0.25 tsp cumin powder
- 10 coriander leaves
- 1 tsp salt

Take 2 medium sized shredded zucchini in a strainer and sprinkle some salt and mix. Let it stand for about 10 minutes and after that squeeze as much as water you can from the shredded zucchini.

In a large mixing bowl, take the shredded zucchini, 2 cups of grated paneer and 1/2 cup of bread crumbs.

Now add around 10 finely chopped mint leaves, 1 finely chopped green chilli, 1 tsp chilli flakes, 1/2 tsp oregano, 1/4 tsp black pepper powder, 1 tsp lime juice and salt to taste.

Mix all this well and form into tikkis. Deep fry them in hot oil until golden brown. You can also shallow fry or use an air fryer. Serve immediately with ketchup, yogurt or mayonnaise.
