In a bowl, take 1 cup of all-purpose flour, 2 tbsp besan and 2 tbsp of semolina (suji) and mix.
In another bowl, take a little more than 1/2 cup ghee (clarified butter) and add 3/4 cup + 2 tbsp of powdered sugar and mix well till puffy. Then add 1 tsp baking powder and 1/2 tsp cardamom powder.
Add the flour mix gradually into this bowl and mix well. You can add 1 to 2 tsps of milk only if the dough is too dry. Form a dough and spread some ghee on a baking tray.
Shape the nankhatais in your desired shape and flatten them.
Make a slit vertically and horizontally.
Top them up with chopped dry fruits like almonds or pistachios.
Microwave them at convection 180° for about 18-20 mins. Makes around 13 nankhatai
