Lemongrass Coconut Tofu

Ingredients
- 2 clove garlic - 4 cl
- 1 Spinach
- 2 Green Onion -100 grams
- 2 tbsp chilli sauce
- 1 lemon juice tablespoon
- 0.5 cup Fresh Coconut
- 200 gm onion paste
- 1 lemon grass
- 3 tbsp coriander powder
- 0.25 tsp salt
- 1 tsp roasted cumin powder teaspoon
- 0.5 tsp coriander powder

Instructions

Finley chop the chillies, lemongrass, coriander and spring onions in a bowl.

Add the garlic, turmeric, sweet chilli sauce, lime juice and coconut milk. Salt and pepper.

Place tofu in a baking dish and pour sauce over. Cover with foil and marinate for 1/2 hour.

Preheat the oven to 180C.

Bake the tofu for 10-15 mins.

You can do the same in a pan.

Serve with rice and steamed veggies.
