Lemongrass Coconut Tofu

Ingredients

  • 2 clove garlic - 4 cl
  • 1 Spinach
  • 2 Green Onion -100 grams
  • 2 tbsp chilli sauce
  • 1 lemon juice tablespoon
  • 0.5 cup Fresh Coconut
  • 200 gm onion paste
  • 1 lemon grass
  • 3 tbsp coriander powder
  • 0.25 tsp salt
  • 1 tsp roasted cumin powder teaspoon
  • 0.5 tsp coriander powder

Instructions

    Finley chop the chillies, lemongrass, coriander and spring onions in a bowl.

    Add the garlic, turmeric, sweet chilli sauce, lime juice and coconut milk. Salt and pepper.

    Place tofu in a baking dish and pour sauce over. Cover with foil and marinate for 1/2 hour.

    Preheat the oven to 180C.

    Bake the tofu for 10-15 mins.

    You can do the same in a pan.

    Serve with rice and steamed veggies.
