Mash 4 ripe bananas and keep aside.
In another bowl, add 2 tbsp of butter, 1/2 cup powdered white sugar and 1/2 cup coconut sugar / brown sugar and mix well. Add 2 tbsp of olive oil.
Beat 3 eggs in a bowl and add to the sugar mixture.
Then sieve 1.5 cups of all-purpose flour, 1/4 tsp baking soda, 3/4 tsp baking powder and a pinch of salt (skip if you have added salted butter) into the mixture. Add 1 tsp of vanilla essence. Mix well and pour in a greased bread mould.
Add vertically sliced banana pieces for decoration. Bake at 160° C for 60 mins.
