Peel Kathal and cut it into medium pieces. You can cut Kathal as per your choice.
Wash the cut Kathal twice with clean water.
Cut Kathal in half, then cut it again in half to make small pieces.
Boil Kathal in a pressure cooker by adding 1 cup of water, 1 tsp salt, and 1/4th tsp turmeric powder.
Cook Kathal till 1 whistle. Be careful not to overcook Kathal as it will become soft in 1 whistle.
Remove the water from Kathal once it is cooked.
Heat a pan with 3-4 tbsp mustard oil and add cumin seeds, bay leaves, whole spices (cinnamon, cardamom, cloves), dry red chillies, onions, and garlic.
Fry the spices till they change color. Then add tomatoes and ginger paste and cook for 5-6 minutes.
Add salt, turmeric powder, red chili powder, coriander powder, cumin powder, and Kashmiri red chili powder to the pan. Cook for another 4-5 minutes.
Add fried Kathal to the pan and mix with spices. Add water as required and cook on low-medium flame for 12-15 minutes.
Stir well and adjust consistency by adding hot water if needed. Finally, add garam masala and serve hot.
