In a pan, add 2 tbsp oil and 2 tbsp ghee. Once the pan heats, add 1 tsp cumin seeds, 2 pieces of cardamom, 2 pieces of cloves, few pieces of cinnamon sticks, 1 small piece of star anise. Cook till the cumin seeds are slightly brown and then add 1 finely chopped onion.
Add chopped capsicum, french beans, carrot, and add green peas and corn. Add 2-3 tbsp of water and salt as per taste and cover and cook for 2-3 minutes.
Once done add the coriander paste (grind 1 cup coriander leaves, 1 small onion, 3 cloves of garlic, 3 green chilies, 1 inch of ginger and lemon juice of 1/2 a lemon). Mix well and cook for 2 minutes.
Then add 1/2 tsp coriander powder, 1/2 tsp cumin powder, and cover and cook for another 2 mins. Add the rice and mix nicely. Add more salt if required and add coriander leaves to garnish.
Add 1 tbsp water if required and toss it lightly. Serve hot!
